Sweet Potato Soup 蕃薯汤


Bit Bit went to Giant supermarket recently and bought some japanese sweet potatoes. After eating some steamed sweet potatoes, Bit Bit wanted to try a simple sweet potato dish and the sweet potato soup came to mind.

The sweet potato soup is simple to cook, and takes about 30 mins to finish everything, including preparing the ingredients.

Things that Bit Bit found out about the sweet potato soup:
  • Sweet potatoes turn brown very easily due to the oxidation. Try using a stainless steel knife to cut them, else they will turn brown in about 5-10 seconds after you cut them.
  • Spoilt sweet potatoes are dark brown in colour and do not smell 'fresh'. Remember to cut and throw them away.
  • It is very hard to cook sweet potato soup that does not taste well. Just add more sugar for the sweetness and it will turn out fine. However, try not to add too much ginger if you do not like the taste of ginger.




Ingredients that Bit Bit used for Sweet Potato Soup:
  1. Japanese Sweet Potatoes - 1 Medium size
  2. Pandan Leaves - 2 Leaves
  3. Yellow Ginger - 1 Slice
  4. Fine Sugar - Around 2 to 3 tbsp (add according to your taste)
  5. Water - Around 400 to 500ml



Method that Bit Bit used to cook Sweet Potato Soup:
  1. Remove the skin of the sweet potatoes, and cut the sweet potatoes into cubes.
  2. Wash the pandan leaves.
  3. Cut a slice of the ginger.
  4. Bring a pot of water to boil.
  5. Put in the sweet potatoes, pandan leaves and ginger slice into the boiling water.
  6. Simmer the pot of ingredients till the sweet potatoes soften.
  7. Add sugar to taste.
  8. Serve and eat!
