Stir-Fried Chye Sim (Choy Sum) with King Oyster Mushroom 菜心炒杏鲍菇


Bit Bit wants to make a bento, and after making onigiri which has both carbs and protein, Bit Bit needs some fibre. There were three types of vegetables at home, and it has been some time since Bit Bit ate chye sim, so Bit Bit decided on stir-fried chye sim with some king oyster mushrooms which Pig had just bought.

Stir-fried chye sim with king oyster mushroom took about 30 minutes to complete.
 
 
Things that Bit Bit found out about stir-fried chye sim with king oyster mushroom:
  • Chye sim cannot be cooked for too long, else it will become old and it would not taste as nice as it is.
  • Chye sim is not one of Bit Bit's favourite vegetable, as it is not as crunchy as the other leafy vegetables like baby bok choy (xiao bai cai) or shanghai green (bok choy).
  • This dish is more towards a light taste, where the freshness of the vegetables can be tasted, as there would not be much seasonings.


Ingredients that Bit Bit used for Stir-Fried Chye Sim with King Oyster Mushroom:
  1. Chye Sim (Choy Sum) - 1 Bunch
  2. King Oyster Mushroom - 1 Large Whole
  3. Canola Oil - 1 Tbsp
  4. Water - 1/2 Cup
  5. Salt - 1 Tsp
  6. Light Soy Sauce - 1/2 Tbsp

Method that Bit Bit used to cook Stir-Fried Chye Sim with King Oyster Mushroom:
  1. Wash the chye sim, cut off the stems, and cut the stalks into half.
  2. Wash the king oyster mushroom, cut off the roots, and cut the mushroom into slices.
  3. Heat up a pan and add oil.
  4. Add in the sliced king oyster mushrooms and fry for a minute.
  5. Add in the chye sim and water and stir fry for a minute.
  6. Simmer for about 5 minutes till the chye sim leaves turn dark green.
  7. Add in salt and light soy sauce.
  8. Stir fry for a minute.
  9. Serve and eat!
